Simon Lam-Ying Chung
Dallas, TX - Age 72 of Mundelein, IL passed away January 12th, 2021. He is survived by his devoted wife of 44 years, Lucia Shiu-Yung Chung; daughter and son-in-law, Teresa and Adam Hutchinson of Lake Forest, IL; son and daughter-in-law, Stephen Chung and Sisi Zheng of Dallas, TX; grandchildren, Michaela and Rebecca Hutchinson.
Simon was born in Taishan City, China on May 13th, 1948. In 1952, he moved from Taishan to Hong Kong, where he attended primary school at the Christian Zion Primary School, secondary school at the Hong Kong Kowloon Tong Model Middle School, and preparatory course and freshman year at Baptist University. From 1956-57, he participated in the fellowship at Huoquan Church. He was baptized at the age of 13 at the Woot Chuen Evangelical Free Church.
In the summer of 1968, he went to the United States to continue his studies. He completed his undergraduate studies at Bethel College (1968) and the University of Illinois – Chicago (1969). He subsequently pursued graduate studies in microbiology at the Illinois Institute of Technology, where he earned a Masters of Science (1973) and a Ph.D. (1980).
Simon was a Biology Professor for 33 years, first at Trinity International University and later at Northeastern Illinois University, and he served as Chair of the Biology Department at both institutions.
He served as a founding member of the Chinese Evangelical Free Church of Greater Chicago, and from 2000-2005 he served as Chairman of the Association of North American Chinese Evangelical Free Churches (ANACEFC). He also served on the Board of Directors of the Evangelical Free Church of America (EFCA) from 1997-2003. He was a founding director of MediCare Resources Ltd., a Christian organization serving the underprivileged population in China from 1997-2012, and was instrumental to startup projects In Wuhan and Yichang, including three clinics and a mobile clinic.
Simon married Lucia Leung on July 24th, 1976. Teresa was born in 1979 and Stephen was born in 1980. He enjoyed taking the family on numerous road trips to national parks and later cruise vacations. Throughout his life he shared his abundant gifts as a teacher and mentor with many, both in his academic career and ministry. Upon retirement from professional life in 2010, Simon embarked on a new career as a full-time professor and coach to Michaela, and subsequently also to Rebecca in 2012. He enjoyed cherishing God’s creation through gardening, photography, and travel. He was known for his humble devotion to his family and friends, as well as always being a trusted source of wise counsel. He will be sorely missed.
