Carol Erickson Obituary
Carol Nielson Erickson, mother of five and grandmother of eleven, died at her nursing home in Allen, Texas on Sunday, June 30, 2019. She was 71 years old.
Carol was born in Murray, Utah on April 16, 1948 to Hunt Leo Nielson and Maurine Torgensen Nielson of Bingham, Utah. She grew up in Bingham Canyon where her father worked as a miner and owned a gas station. She graduated from Bingham High School in 1966, and then attended Utah State University. She married in 1968 and moved to Plano, Texas in 1972. There she raised her five children, moving to Allen in 1987. Later in life, she also lived in West Jordan, Utah and Sparks, Nevada.
She was active in the LDS Church in the Plano and Allen congregations. She had an outgoing personality which was drawn to children and animals, especially cats. She excelled at crafts and loved to create Christmas presents for friends, neighbors, and teachers. She worked at Lovejoy Elementary School for several years as a teacher's aide, and provided daycare and foster care to many children. She was a dedicated friend and a loving mother and grandmother.
She passed away from pneumonia brought on by complications from diabetes. She had been living in the nursing home since 2015.
She is survived by her five children: Eric, Laurie, Maurine, Evan, and Niel, and her eleven grandchildren: Erika, Dallas, Hunter, Cari, Lauren, Juliana, Emily, Carson, Savana, Brayden, and Crosby. She is preceded in death by her parents and her older siblings, Patricia and Derald.
